Easy Vegan Farro Salad

This farro salad would make a great side dish for any picnic or BBQ.

What is Farro?

Farro is a whole grain wheat that looks similar to barley (farro is larger and more oblong). Farro is considered an ancient grain, which the Oldways Whole Grains Council defines as a grain “largely unchanged over the last several hundred years.”

Farro is high in protein in fiber. It’s an excellent source of nutrients like magnesium, zinc, and some B vitamins.

What does farro taste like?

Farro has a nutty flavor with a hint of cinnamon and a chewy texture perfect for salads, soups, and sides.

Farro is a wheat product and contains gluten. If you’d like to make this recipe gluten-free, you can substitute quinoa or brown rice.

Easy Vegan Farro Salad

Easy Vegan Farro Salad

Ingredients needed:

For the salad:

1 cup cooked farro

2 cups mixed salad greens

1 cucumber (diced)

1 1/2 cups cherry tomatoes

1 1/2 cups cooked chickpeas (canned is fine- be sure to drain and rinse)

1/4 cup finely chopped fresh parsley

(optional- Vegan Feta cheese)

For the Italian Vinaigrette Dressing:

1/4 cup extra virgin olive oil

1/4 cup red wine vinegar

2 teaspoon Dijon mustard

1 tsp agave

1 tsp Italian seasoning

Sea salt and black pepper to taste

In a large bowl, combine the mixed salad greens, cooked farro, cooked chickpeas, cucumber, tomatoes, and parsley.

In a small bowl, whisk together the olive oil, red wine vinegar,  Dijon, agave, Italian seasoning, salt, and pepper until combined

Add the dressing to the salad and top with non-dairy Feta cheese. If you are meal prepping this recipe, I suggest keeping the salad greens separate until you’re ready to serve so they won’t get soggy.

  • 1 cup cooked farro

  • 1 cucumber, diced
  • 1 1/2 cups cherry tomatoes

  • 1/4 cup red wine vinegar

Instructions
 

  • In a large bowl, combine the mixed salad greens, cooked farro, cooked chickpeas, cucumber, tomatoes, and parsley.
  • In a small bowl, whisk together the olive oil, red wine vinegar,  Dijon, agave, Italian seasoning, salt, and pepper until combined.
