This easy vegan carrot ginger soup is a comforting and healthy meal that’s perfect anytime. The soup is made with simple ingredients like onion, garlic, ginger, carrots, sweet potaotes and vegetable broth, and can be easily made in under 30 minutes. It’s creamy, savory, and has a subtle sweetness from the carrots that pairs perfectly with the warming ginger.

It’s also vegan, gluten-free, nut-free and dairy-free, making it a great option for anyone with dietary restrictions. Enjoy it as a main meal or as a side dish, and don’t forget to top it with some fresh herbs or a dollop of coconut cream or plain dairy-free yogurt for some extra flavor!

Easy Vegan Carrot Ginger Soup

Easy Vegan Carrot Ginger Soup

Ingredients needed:
2-3 tbsp olive oil (plus more for drizzling the sweet potatoes)
1 small yellow onion, diced
4 large carrots, diced
1 tbsp freshly grated ginger
3 garlic cloves, minced
2 large sweet potatoes (peeled and cut into 1-inch sections)
4-5 cups vegetable broth

Directions:

Preheat the oven to 425 degrees and line a baking sheet with parchment paper. Arrange the sweet potatoes on the tray, making sure that none are overlapping. Drizzle with olive oil and season with salt and pepper.

Bake for 20 minutes, flipping the sweet potato cubes over halfway through the cooking.

Heat the olive oil in a large pot over medium heat. Add the onion, diced carrots and garlic and cook until the onion is translucent, about 5 minutes.

Easy Vegan Carrot Ginger Soup

Add the grated ginger and cook for another minute. Add the roasted sweet potato and vegetable broth. Bring the soup to a boil and then reduce to a simmer. Simmer for 10 minutes or until the carrots are tender.

Use an immersion blender or transfer the soup to a blender and puree until smooth. Season with salt and pepper. You can also add a dollop of coconut cream or plain dairy-free yogurt. If you’ll like some crunch, add peanuts or roasted chickpeas. Enjoy!
