Easy Vegan Broccoli Cheddar Soup

This soup is deliciously creamy, thick and rich, with the perfect mixture of smoothness and texture and loaded with broccoli cheddar flavors.

Easy Vegan Broccoli Cheddar Soup

Easy Vegan Broccoli Cheddar Soup

Ingredients:
2-3 tbsp Olive oil
3 tbsp Vegan butter
1 yellow onion
4 garlic cloves
1/4 cup all-purpose flour
1 tsp thyme
salt and pepper to taste
2 cups vegetable broth
1 large head of broccoli (cut into florets)
1 medium head of cauliflower (cut into florets)
1 can full-fat coconut milk
1/3 cup Nutritional yeast
1 1/4 cups vegan cheddar cheese

Directions:
In a large pot, heat the olive oil and butter over medium heat until the butter melts. Add the chopped onion and cook until soft and translucent (5-7) minutes. Add the garlic cloves, salt and pepper, thyme and all-purpose flour.
Cook until the flour dissolves. Add the vegetable broth, coconut milk, broccoli and cauliflower. Bring to a simmer, leaving the pot partially uncovered. Cook for 12-15 minutes stirring occasionally until the cauliflower and broccoli are tender.

Easy Vegan Broccoli Cheddar Soup

Using an immersion blender, or high speed blender, blend 1/2 of the soup until it is smooth. Stir in the nutritional yeast and vegan cheddar cheese. Serve and enjoy!
