A galette is a type of rustic, free-form pastry that originates from France. It’s characterized by its open-faced, flat design and is typically made with a single layer of pastry dough that is folded or pleated around a filling, leaving the center exposed.

Are Galettes easy to make?

Galettes have a more relaxed and informal appearance than pies. The folded edges of the dough give it a slightly uneven and rustic look, which adds to its charm.

One of the advantages of making a galette is its simplicity. It doesn’t require a pie dish or special shaping techniques, making it a great option for those who want to create a visually appealing dish without the precision required for a traditional pie.

Easy Vegan Blueberry Galette

Ingredients:
For the crust:
1 1/2 cups all-purpose flour
1 tbsp granulated sugar
8 tbsp vegan butter
3 tbsp ice water

For the filling:
2 1/2 cups fresh blueberries
1/3 cup granulated sugar
3 tbsp cornstarch
1 tbsp fresh lemon juice

Optional, but recommended: Agave for brushing the crust to turn it golden brown.

Directions:

Add the flour and sugar to a food processor and process for 5 seconds to combine. Add the butter and process for 15 seconds or until it looks like coarse meal.
Add the 3 tbsp of water and process until the dough clumps together.

Wrap the dough in Saran Wrap and put it in the refrigerator.

While the dough is chilling, add the fresh blueberries, granulated sugar, cornstarch and lemon juice to a mixing bowl. Toss to combine.

Preheat the oven to 375 degrees and line a baking sheet with parchment paper.

Roll out the dough in a circular shape (it doesn’t have to be perfect at all!) until it is approximately 1/4 inch thick.

Add the filling to the middle leaving a 2-3 inch boarder all around.

Easy Vegan Blueberry Galette

Fold the edges of the dough over and crust them with agave. Agave will turn the crust a nice golden brown.

Bake for 45-50 minutes or until the edges are golden brown. Remove from heat and let cool. The filling will firm up as it cools. Serve with vegan vanilla ice cream and enjoy!
