This vegan beet salad consists of roasted beets (the pre-cooked ones from the grocery store to save time), mixed with greens, topped with chopped walnuts, dairy-free feta cheese, and a vinaigrette dressing.

Easy Vegan Beet Salad

Ingredients needed:
1 package ready-to-eat cooked beets
3 cups salad green (I used a spring mix)
1/2 cup chopped walnuts
1/4 cup vegan feta cheese (this particular cheese tastes very similar to goat cheese- even though it’s labeled as feta- which make it ideal for this recipe)
For the Maple Dijon Vinaigrette:
1/8 cup olive oil
2 tbsp red wine vinegar
1 1/2 tsp Dijon mustard
2 tbsp maple syrup
salt and pepper to taste
Instructions:
In a large bowl, add the washed salad greens. Slice the pre-cooked beets into small sections and add them to the greens. Sprinkle the chopped walnuts and dairy-free feta on top.
In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, maple syrup. Season with salt and pepper. Dress the salad and enjoy!
