Ingredients needed:
For the crust:
1 1/4 cups all-purpose flour
1 tbsp sugar
1/4 tsp salt
8 tbsp Vegan butter, cold and cubed
1/4 cup + 1 tbsp ice water

For the filling:
6 small apples or 4 medium apples (I used Honeycrisp)
1/4 cup vegan butter
1/4 cup sugar

Directions:

To make the pie crust– add the flour, sugar and salt to a food processor. Pulse to combine. Add the cold, cubed butter and pulse approximately 10 times or until the butter is pea-sized. Pour in the ice water and pulse another 10 times or until the mixture holds together when you pinch it. Form the dough into a ball and wrap in Saran Wrap. Place in the refrigerator for at least an hour.

On a lightly floured surface, roll out the dough into a 12 inch round. Transfer the dough into a tart pan with a removable bottom. Press it lightly into the edges and trim off any excess. Transfer to the fridge for 30 minutes.

For the filling: Preheat the oven to 425 degrees. Cut the apples from the core and thinly slice them.
