Easy Vegan Apple Bread

Ingredients needed:
1 medium size very ripe banana
1 1/2 cups all-purpose flour
1 1/2 cups diced Granny Smith apples, cut into 1/4 inch cubes
1 tsp baking soda
1/4 tsp salt
1 1/2 tsp cinnamon
1/2 cup applesauce
2 tbsp vegetable oil
2 tbsp almond milk
1 tsp pure vanilla extract
1/2 cup pure cane sugar
1/2 cup chopped walnuts
Directions:
Preheat the oven to 350 degrees and grease a loaf pan.
In a small bowl, mash the very ripe banana with a fork and set it aside.
In a medium mixing bowl, add the all-purpose flour, baking soda, salt and cinnamon and whisk together. Add the applesauce, pure cane sugar, vegetable oil, almond milk, pure vanilla extract and mashed banana and stir until combined. Be careful not to overmix.
Fold in the diced apple pieces and the chopped walnuts. Pour the mixture into the greased loaf pan and smooth the top with a spatula.
Bake for 30 minutes, then cover with a piece of tin foil and bake an additional 30 minutes. The bread is finished baking when a toothpick inserted into the center comes out clean.
