If you’ve never added zucchini to your chocolate desserts before, you’re in for a treat. This recipe is the perfect way to use up any extra zucchini you have in your fridge. Zucchini has a high water content, so it makes these brownies soft and chewy.
Zucchini is low in calories and high in Vitamin C, Potassium and fiber. Adding zucchini to baed goods is a great way to cut calories and fat and add nutrition without sacrificing flavor.
Easy Delicious Vegan Zucchini Brownies

Ingredients needed:
2 cups grated zucchini
1 Very ripe mashed banana
1 1/2 cups all-purpose flour
2/3 cup Dutch cocoa powder
1 1/2 tsp Baking powder
1/2 tsp Salt
1/3 cup Almond milk
1/3 cup Vegetable oil
1 tsp Pure vanilla extract
1/2 cup Dairy-free chocolate chips (plus more for topping)
1/2 cup Chopped walnuts (plus more for topping)

Directions:
Preheat the oven to 350 degrees Fahrenheit and grease an 8×12 baking dish.
Using a cheese grater, grate the zucchini on the largest side. Don not squeeze out the excess moisture. Set the grated zucchini aside.
In a bowl, mash a very ripe banana using a fork and set aside.
Add the all-purpose flour, cocoa powder, pure cane sugar, baking powder and salt to a medium-sized mixing bowl and whisk together. Pour in the almond milk, vegetable oil and pure vanilla extract and stir until combined.
Add the grated zucchini and mashed banana and stir until combined. Fold in the chocolate chips and walnuts.
Scoop the mixture into the baking dished bake for 35 minutes. Let the brownies cool thoroughly before cutting and serving.
