Banana bread is one of my favorite things to bake. I’ve experiemented with many vegan banana bread recipes over the years, but this one is my hands-down favorite. It’s moist, delicious and perfectly sweet.

The secret to a great-tasting banana bread is to use overripe bananas. They should be soft with plenty of brown spots.

In a large mixing bowl, mash up 3 bananas using a potato masher or fork. Make sure they are mashed thoroughly with no large chunks remaining.

Add the sugars, coconut oil and vanilla. Stir together until it is blended well.

Add the flour, baking soda, salt and cinnamon to the bowl. Stir together until blended, being careful not to over-mix. Over-mixing can cause quick breads to be tough, bake unevenly or cause elongated holes (or tunnels).

If you’re adding vegan chocolate chips or chopped walnuts, you can fold them in now. I didn’t add either this time and the bread is still unbelieveably good!

Pour mixture into a greased 9-inch loaf pan. The dough will be thick. Smooth the top with the back of a spoon to make sure it is even in the pan. Take the remaining 2 bananas and slice them thin. Line the top of the bread with them and bake at 350 degrees for 50 minutes or until a toothpick inserted in the center comes out clean.

Remove from the oven and let cool thoroughly.

The bread can be served as-is, or you can decorated it with a scattering of fruit.

Ingredients
  

  • 5 over ripe bananas
  • 1/3 cup organic sugar
  • 1/3 cup brown sugar
  • 1/3 cup coconut oil
  • 1 tsp pure vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1 cup vegan chocolate chips or chopped walnuts (optional)

Instructions
 

  • Preheat oven to 350 degrees. Grease a 9-inch loaf pan.
  • Peel 3 bananas and add them to a large mixing bowl. Mash them thoroughly using a fork or potato masher. Add the sugars, oil, and vanilla and stir together until combined.
  • Pour mixture into loaf pan. It will be thick. Smooth the top with the back of a spoon. Cook for 50 minutes or until a toothpick inserted in the center comes out clean.
  • Let thoroughly cool before cutting.
