Best Vegan Black Bean Burger

Deliciously Easy: Sink your teeth into this flavorful vegan black bean burger, packed with protein and plant-based goodness

Ingredients:
2 tbsp ground flaxseed
2, 15.5 oz cans black beans, drained and rinsed
1 1/2 cup cooked brown rice (you can also use quinoa)
1 cup cashews
1 yellow onion, chopped
2 tbsp olive oil
1/2 cup fresh parsley, chopped
1 cup breadcrumbs
1 tbsp smoked paprika

Directions:
In a small bowl, add the ground flaxseed with 4 tablespoons of water. Stir to combine and set it aside to thicken.

In a medium sized mixing bowl, add the drained and rinsed canned black beans. Mash them using a potato masher or fork. It’s ok if some of the beans remain whole.

Add the cashews to a food process or high-speed blender. Process a few seconds until they break into pieces- do not turn the cashews into a powder by over-processing.

Add the olive oil to a skillet on medium heat. Allow it to heat up for a few minutes. Add the chopped onion and cook until translucent (5-7 minutes). Remove from the heat.

Add the cashews and sautéed onions to the black bean mixture, almond with the breadcrumbs, chopped parsley and smoked paprika. Pour in the flaxseed mixture and stir until combined.
