Baked vegan Mac and cheese is a plant-based version of the classic comfort food that is made with vegan ingredients such as cashews, nutritional yeast, and plant-based milk. It is made by cooking pasta according to package instructions, then mixing it with a creamy, cheesy sauce made from soaked and blended cashews, nutritional yeast, plant-based milk, and seasonings.
The pasta and sauce are then combined and baked in the oven until the top is golden brown and crispy. Baked Vegan Mac and Cheese
Rich, creamy and without a hint of dairy! This recipe makes a generous portion and it tastes even better the next day!

Ingredients needed:
1 1/2 cups cashews
1/2 cup Nutritional yeast
1 tsp minced garlic cloves
1/4 tsp Turmeric
Juice from 1 lemon
1 cup Vegan shredded cheddar cheese
12 oz Elbow macaroni
1 1/4 cups Panko breadcrumbs
4 tbsp vegan butter
1/2 tsp smoked paprika
Directions:
Place the cashews in a medium-sized bowl. Cover the cashews in boiling water and let sit for 30 minutes. Drain.
Preheat the oven to 350 degrees and grease a 13 X 9 inch casserole dish.
Cook the elbow macaroni according to the directions on the package. Drain when it is finished cooking.

In a high-speed blender, add the cashews, 2 cups of water, nutritional yeast, freshly-squeezed lemon juice, minced garlic, turmeric, and vegan shredded cheddar cheese. Blend until smooth. Add the cooked pasta to the casserole dish and pour the cheese mixture on top. Stir to combine.

In a bowl, add the melted vegan butter, Panko breadcrumbs and smoked paprika. Whisk until combined.

Evenly spread the breadcrumb mixture on top of the macaroni and cheese. Bake for 13-15 minutes or until golden brown.
