Ingredients:
3 large overripe bananas, mashed (approximately 1 1/2 cups)
1/3 cup coconut oil, melted
1/2 cup pure granulated sugar
1 1/2 tsp pure vanilla extract
1 1/2 cups all-purpose flour
1 tsp ground cinnamon
1/2 tsp nutmeg
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup grated carrots
1/3 cup chopped pecans (or walnuts)
Directions:
Preheat the oven to 350°F and grease a loaf pan.
In a medium bowl, mix together the mashed bananas, sugar, melted coconut oil, grated carrots and pure vanilla extract.
In a separate mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the chopped pecans.

Scoop the batter into the loaf pan and smooth the top with a spatula. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10-15 minutes before removing and transferring to a wire rack to cool completely.
