1 Bowl Vegan Chocolate Walnut Banana Bread

Banana bread is easy to make and it’s always a crowd-pleaser. This vegan version is soft, flavorful, and sprinkled with chocolate chips and walnuts. It’s mixed in one bowl so clean up is minimal.

How ripe should the bananas be?

The best bananas for banana bread are the ones that are way too ripe to be eaten. They should be heavily streaked with brown/black and the inside should be very mushy.

Why is it so important not to overmix quick bread?

Overmixing can cause quick bread to be tough, bake unevenly or cause elongated holes. The more you mix your batter, the more gluten is developing in the bread – which is great for a yeast-risen, chewy loaf, but not so great when you’re hoping for a tender, soft quick bread. Quick bread that has been overmixed will be dense and rubbery.

Ingredients:

Very ripe bananas

Pure cane sugar

Coconut oil

Pure vanilla extract

Baking soda

Baking powder

Salt

Vegan dark chocolate

Walnuts

1 Bowl Vegan Chocolate Walnut Banana Bread

Preheat the oven to 350 degrees Fahrenheit and grease a loaf pan. In a large bowl, mash the bananas. Add the melted coconut oil and pure vanilla extract. Mix until combined.

Add the flour, sugar, baking powder, baking soda, and salt and mix until combined. Be careful not to overmix. Fold in the chocolate chips and nuts.

Bake for 50 minutes or until a toothpick inserted into the center comes out clean. Let cool and enjoy!

How to store banana bread:

Banana bread doesn’t last long before losing its freshness. To keep it fresh longer, keep it wrapped in plastic or foil. Refrigerating tightly wrapped banana bread can also extend the shelf life.

Ingredients
  

  • 1 3/4 Cups All-purpose flour
  • 3 Large overripe bananas
  • 1/3 Cup Cane sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp pure vanilla extract
  • 1/3 cup melted coconut oil
  • 1/4-1/2 cup vegan chocolate chips
  • 1/2 cup chopped walnuts

Instructions
 

  • Preheat oven to 350 degrees and grease a loaf pan.
    In a large bowl, mash the bananas, add coconut oil and vanilla extract. Mix until combined.
  • Add the sugar, flour, baking soda, baking powder and salt and mix until combined. Be careful not to overmix.
  • Fold in the chocolate chips and nuts. Scoop batter into the greased loaf pan and bake for 50 minutes or until a toothpick inserted in the center comes out clean. Let cool.
